We are delighted to announce the arrival of our new Head Chef Mark Dickson, who replaces Malcolm who left after 25 years running the kitchen here at the Pheasant Inn. Mark, from the Inverness area has run the kitchens and created dishes in many highly rated Hotels and Restaurants, including the Michelin starred Peat Inn in St Andrews, Fife.
He loves living in Cumbria where he can indulge his passion for foraging for excellent local produce. In his spare time, he enjoys the hills and mountains and competes in triathlons. Mark is passionate about local and seasonal food and describes his style as classic with a modern twist. He also brings with him a superb recipe for sourdough bread, using a starter dough started in 1985!
We really pleased to welcome Mark and are incredibly excited about the changes he is making to our menus. We have long prided ourselves on offering exceptional food, with everything created in-house and Mark is absolutely embracing that.
